- Bake Potato Soup Hard Rock Cafe -

8 slices bacon

1 cup diced yellow onion

2 / 3 cup flour

6 cups stock Hotchicken

4 cups diced - peeled cooked potatoes

2 cups heavy cream

1 / 4 cup chopped parsley

1 1 / 2 tsp tsp garlic powder

1 1 / 2 tsp teaspoon dried basil

1 1 / 2 teaspoon salt

1 1 / 2 teaspoon red pepper sauce

1 1 / 2 teaspoon cracked black pepper

1 cup shredded cheddar cheese

1 / 4 cup diced green onions - white part only

Additional chopped bacon -

Grated cheese and chopped parsley for garnish

Fry bacon until crisp. Chop bacon and reserve drippings.

Sauted onions in remaining fat over medium-high heat until transparent, about 3 minutes. Add flour, stirring to avoid lumps.

Bake 3-5 minutes until mixture just starts to run gold. Add chicken broth gradually, whisking to prevent lumps, until liquid thickens. Reduce heat and add potatoes, cream, bacon, parsley, garlic, basil, salt, pepper and black pepper. Simmer 10 minutes, DO NOT let it boil. Add grated cheese and green onions.

Heat until cheese is melted smooth.

Garnish each serving with choice of chopped bacon, shredded cheese and chopped parsley.
