Chili ChocolatePosted on February 20, 2010. The Vosges chocolate / chili truffles have green mold growing between them. Why only the w / chili? I received a box of Vosges (upscale and exotic) chocolate truffles, truffles and had chilli in them had green mold growing between them. Why is it only the w / chili? The enemy of the ganache is moisture. What happened was probably something in the ingredients have a smidge of mold spores and moisture allowed it to grow.
