Some do, and pass or fail during cooking. Vitamin C is more succeptibles this. But should not worry because the frozen fruit and vegetables often have more nutrients than fresh. Because fees are typically harvested early so they do not rot in transit. And the premature harvest means less accumulation of nutrients.

But some nutrition vegetables actually increase due to cooking. From what I read is how you cook vegetables that made the difference Eating raw is best, the best way to cook steamed them and boiling them is the worst option. Boiling cook all the vitamins and minerals.

Yes, after you cook (or thaw) the vegetables in water, then drain them once they are cooked, you are essentially draining your vitamins and minerals, since vitamins are now in your water.

Yes most of the vitamins are lost. Best way to cook frozen vegetables is to steam them, almost no vitamins or minerals are lost then!
