INDIVIDUAL CHOCOLATE LAVA CAKES Ghirardelli

Centers:
1 / 2 bar (2 oz) 60% cacao bittersweet chocolate baking bar
1 / 4 cup heavy cream

Cakes
cooking spray
1 bar (4 oz) 60% cacao bittersweet chocolate baking bar
1 stick unsalted butter
2 eggs
2 egg yolks
1 / 3 cup sugar
1 / 2 c. vanilla
1 / 4 cup cake flour

For centers:
Melt chocolate with cream on top of a double boiler. Whisk gently to combine. Refrigerate for 2 hours or until firm. Shape into 6 balls.

For the cakes:
Preheat oven to 400 degrees. Spray 6 ramekins or 4-ounce ramekins with nonstick cooking spray. Melt chocolate and butter in top of double boiler. Whisk the mixture gently to mix. With an electric mixer, whisk together eggs, egg yolks, sugar and vanilla on high for 5 minutes. Fold the chocolate mixture and flour into egg mixture until smooth. Pour the mixture evenly among ramekins. Place a center of the chocolate ball in the center of each ramekin of dough. Bake 15 minutes or until firm to touch. Let stand 5 minutes before inverting on a dessert plate. Remove ramekins.
