Does anyone have good recipes for easy dinner
no pork or beef just chicken and beef should not be too expensic

QUICK TEXMEX Goulash

1 / 2 lb. macaroni
1 pound ground sirloin
1 small onion, diced
2 v. tomato juice
1 pkg. Taco Seasoning McCormick
1 can black beans, drained and rinsed
1 can sweetcorn, drained
2 v. shredded mozzarella
cream
sliced black olives
chopped green onions

Prepare macaroni according to package directions.
(Note: Do not rinse pasta. Starch left on them helps bind the goulash so it is not too runny.)

Saute the sirloin and onion in a skillet until meat is browned and onions are translucent.

Drain fat. Add tomato juice and taco seasoning to meat. Bring to a boil then reduce heat, cover and simmer for about 10 min.

In a large saucepan, combine pasta, meat mixture, corn, beans and shredded cheese. Allow this to simmer for about 20 minutes or until hot and cheese is melted. You may need to add up over a cup of tomato juice if too dry.

To serve: place a portion of goulash on a plate, then garnish with sour cream, olives and green onions. It's good to put the seal on the table when serving tacos. Do not be afraid to use any toppings you want to use it on a taco. Some, like green peppers, jalapenos, salsa, diced tomatoes, crushed tortilla chips, cheddar cheese. Be creative!


Beef and Spaghetti Casserole

1 tsp diced cooked roast beef
1 1 / 3 c chopped onion
A large clove garlic - minced
1.4 to 1.2 teas. oregano
2 tablespoons butter soup
1 can of condensed soup fiesta nacho cheese
1 can (8 ounces) Mexican stewed tomatoes
1 tsp green beans cooked or canned
2 v. cooked spaghetti

In a saucepan, brown the meat and sauted onion, garlic and oregano in butter until onion is tender. Stir in soup, tomatoes, beans and pasta. Pour into a saucepan and cook at 350 degrees F for 30 minutes.

1 (1-pound) beef tenderloin
Canola oil
kosher salt
2 tablespoons coarsely ground black pepper freshly ground
4 croissants, halved and grilled
8 slices of aged cheddar
Horseradish Mayonnaise, recipe follows
1 bunch watercress, washed and dried


Heat grill to high. Rub meat with oil and season with salt and black pepper. Grill on both sides until slightly charred and cooked to medium-rare cooking, about 4 minutes per side. Remove from grill and let stand 5 minutes. Slice into 1/4-inch thick slices.
Lay grilled halves growing on a flat surface and top each half with a slice of cheese. Divide steak into 4 slices and halves combine to make 4 sandwiches. Wrap each sandwich in paper, place them on the grill and cook for 1 minute on each side. Remove from grill and foil, lift a slice of each sandwich, spread a few tablespoons of mayonnaise with horseradish. Garnish with watercress sprigs and serve.



Horseradish Mayonnaise:
1 / 2 cup prepared mayonnaise
1 tablespoon whole grain mustard
2 tablespoons prepared horseradish, drained
Salt


Whisk together all ingredients in a small bowl. Season to taste with salt. Cover and refrigerate for at least 30 minutes before using.
