Step back in time and out of these old-fashioned salad recipes the next time you need a salad for a picnic, potluck, church supper, etc. They are also great for the family table. We offer a recipe for potato salad classic Copper Wedge salad is a salad of carrots and deviled eggs.


SALAD POTATO CLASSIC Hellman

Real Mayonnaise 1 cup Hellman
2 v. vinegar
1 1 / 2 tsp teaspoon salt
1 tsp Tea
1 / 4 cup pepper
4 cups cooked, diced, peeled potatoes (about 5 or 6)
1 cup sliced celery
1 / 2 cup chopped onion
2 hard boiled eggs, chopped

Mix mayonnaise, vinegar, salt, sugar and pepper. Gently stir in potatoes, celery, Onon, and eggs. Cover and refrigerate until ready to serve.


SALAD coppers
This is a recipe for my husband's aunt Norma.

2 lbs carrots, sliced
1 large onion, chopped
1 cup green pepper, chopped
1 can tomato soup
1 tsp tablespoon Worcestershire sauce
1 tsp teaspoon prepared mustard
1 cup sugar
1 / 2 cup salad oil
1 / 4 cup vinegar

Cook carrots in salted water until tender. Cool. Combine carrots, onion and green pepper together.

To make the vinaigrette, whisk the tomato soup, Worcestershire sauce, mustard, sugar, oil and vinegar until well blended. Pour over vegetables. Refrigerate overnight. Do not stir.


Eggs stuffed Virginia
This recipe is from the old Monroe County, Indiana church cookbook.

6 hard boiled eggs
1 / 4 cup mayonnaise
1 cup vinegar v. Tea
1 tsp teaspoon prepared mustard
1 / 8 teaspoon salt
pinch pepper
paprika, for garnish

Cut eggs in half lengthwise, remove yolks in a small mixing bowl and mash with a fork. Mix mayonnaise, vinegar, mustard, salt and pepper to the mashed egg. Stir until smooth. Fill egg whites with the mixture. Sprinkle with paprika for garnish.
