Hardy Vegetable Soup

Ingredients

(10 servings)

Water 4 qt
3 / 4 c celery, chopped
3 / 4 c onion, chopped
2 cloves garlic, minced
1 Carrots c, sliced
2 c potatoes, diced
2 canola oil tb
1 / 2 C tomato paste
1 / 2 C green pepper, diced
1 c Mixed vegetables
1 / 2 tb Basil
Salt and pepper to taste
1 / 2 C Macaroni
1 / 2 C pearl barley
2 c chicken, beef, ham (leftovers
2 c coarsely chopped cabbage
1 tomato, chopped


Instructions

In a saucepan cook celery, onion and garlic in oil for 5 minutes. Add water, vegetables, barley, meat, seasonings. Bring to a boil and simmer for 1 1 / 4 hours. For last 1 / 4 hour add cabbage and macaroni.

I want to add all sorts of fresh vegetables in my soup ..... For me, fresh vegetables to make soup clearer, but my favorite vegetables is to add the Brussels sprouts and sauerkraut in white wine .... It adds a flavor all its own too if you do not want to kill the soup ............

Vegetable Beef Soup
1 lb. beef stew - cut into small pieces

4 C. beef broth

3 water C.

1 14.5 oz can of crushed tomatoes

1 1 / 2 potatoes cut into cubes C

1 medium onion, chopped

1 carrot sliced C.

1C sliced celery

1 / 2 C. peas - Frozen

1 / 2 C. corn

1C green beans

1 / 2-2 cups herbs of your choice (basil, oregano or dill)

Beef Stew Brown, add onions and cook for 3 minutes. Add water and tomatoes and cook until beef is tender. Add the vegetables except the peas and cook until tender. Add spices, peas and simmer another half hour.

1-2 pounds of stew meat (mainly the taste of the amount of meat you want)
4-8 cubes of beef bullion - to taste
small bag of carrots, halved
1 medium onion, chopped
3 chopped celery
1 can diced tomatoes large
1 head large VERY little shredded cabbage and diced
5-6 potatoes - peeled and chopped

Bring to a boil and the meat cubes 1 / 2 ingots large pot of meat for 2-3 hours until browned and tender. Add all vegetables except potatoes. Reduce heat to medium high. Boil / simmer for 3-4 hours, until cabbage is almost disappears. Stir often. Add water if necessary. Add potatoes and half cubes and cook 1 bulllion hour longer. Again add water as needed. Serve with warm rolls. YUMMY same!

Start with a roast cooked in a skillet small for a few minutes on each side, then simmer in water get a stock or outstanding stock, add the onions, carrots, potatoes, boxes whole tomatoes in a couple, Elery, salt and pepper and my secret, a Franks little hot sauce, and throw in a vegetabless other charges you like corn, peas simmer until roast falls apart, remove the bone if roast bone in it, makes a big pot, the better the next day, hot now in KC 104 ITS FOOD good winter.
