Italian Shrimp RecipesHow to make shrimp fettuccine and Italian vegetables quickly and easily

This recipe for Italian Shrimp and Vegetable Fettuccine is perfect for the busy cook. It's fast, easy, healthy and ready in minutes. You have shrimp, vegetables, and pasta all in this dish quick and easy. The recipe calls for spinach fettuccine, but you can use your favorite pasta. regular fettuccine or angel hair pasta is just as good. This recipe is also suitable for diabetics. Add crusty bread and a light dessert for a perfect meal.

ITALIAN SHRIMP AND VEGETABLE FETTUCCINE

8 oz fettuccine, cooked spinach (or other favorite pasta)
1 / 2 cup Italian dressing
1 1 / 2 tsp teaspoon lemon zest
1 tsp tablespoon virgin olive oil
3 cloves garlic, minced
12 oz shrimp, uncooked, peeled, deveined
3 cup frozen broccoli heads, thawed and chopped into small groups
1 1 / 2 cups fresh zucchini, sliced
2 v. tablespoons water
8 cherry tomatoes, halved
8 ripe olives, halved
8 leaves fresh basil, chopped
Grated Parmesan cheese, if desired

Cook pasta according to the method of packing, drain and keep warm. Meanwhile, combine Italian dressing, lemon zest, garlic and set aside. In a large nonstick skillet over medium heat, heat the oil. Add the shrimp with oil and cook about 2-3 minutes until pink and firm. Remove shrimp from skillet using a slotted spoon. Increase heat to medium-high heat and add the broccoli and zucchini to skillet and sauted about 1 minute. Add 2 tablespoons water, cover and simmer for about 3 minutes, stirring occasionally, until tender but still crunchy. Stir in dressing mixture and cook another 30 seconds. Add tomatoes, olives, basil, shrimp and fettuccine. Serve with grated Parmesan, if desired.

Note: This is also a great recipe for diabetics.
