ITALIAN SHRIMP AND VEGETABLE FETTUCCINE 8 oz fettuccine, cooked spinach (or other favorite pasta) Cook pasta according to the method of packing, drain and keep warm. Meanwhile, combine Italian dressing, lemon zest, garlic and set aside. In a large nonstick skillet over medium heat, heat the oil. Add the shrimp with oil and cook about 2-3 minutes until pink and firm. Remove shrimp from skillet using a slotted spoon. Increase heat to medium-high heat and add the broccoli and zucchini to skillet and sauted about 1 minute. Add 2 tablespoons water, cover and simmer for about 3 minutes, stirring occasionally, until tender but still crunchy. Stir in dressing mixture and cook another 30 seconds.
