Anyone who has ever heard of this? A grandmother's friends from Italy used to make the best spaghetti ever, and she said she has always caramelized meat before making the sauce (I think using Crisco )..... I can not duplicate. If you've got a recipe or any suggestions, it would be much appreciated! Pease and thank you!

You need to caramelize the meat with the tomato paste.

Brown your ground meat, as usual, when done, add a can of tomato paste. Keep the heat to medium and keep up his Mixng Incorporated not only good, but the tomato paste is almost a brown color without burning .... keep mixing! Add your tomato mixture and season as you normally do.

If your use of pieces of meat .... caramelize them with olive oil (she probably used lard) until they are golden brown before adding the tomato paste and proceed as above,

Brown meat and onions well is the key. It takes patience and a lot of excitement. Adding a c. teaspoon sugar to onions usually speeds the process too. Fry the onions first, then fry the meat until it browns with onions. YUM
