A grandmother's friends from Italy used to make the best spaghetti ever, and she said she has always caramelized meat before making the sauce (I think using Crisco )..... I can not duplicate. Brown meat and onions well is the key. It takes patience and a lot of excitement. Adding a c. teaspoon sugar to onions usually speeds the process too.
