For something a little different try this delicious easy recipe for lasagna roll-ups. It is fast and easy and combines several elements in a healthy dish. The grain gives lasagna (even better value if you use grain whole wheat lasagna), provides the ground beef meat, spinach adds a healthy vegetable, of course tomatoes in the sauce are well known to be excellent in reducing cancer risk person, and three kinds of cheese add dairy products to all. It would be a great addition to your recipe file.



LASAGNA ROLL-UPS



4 lasagna noodles



1 / 2 lb. lean ground beef



1 small onion, chopped



1 box frozen spinach, thawed and drained well



8 oz low-fat ricotta cheese



1 egg beaten



1 tsp Tea lowfat milk



1 / 2 c. thyme



1 / 4 c. teaspoon salt, optional



2 cups spaghetti sauce without sugar, meat, divided



1 / 4 cup grated Parmesan cheese



Drain Cook noodles according to package directions, rinse and drain. In a nonstick skillet, cook ground beef and onion until beef is no longer pink. In a colander and rinse with warm water to remove excess fat. Rinse and wipe pan with a paper towel. Add the spinach, ricotta cheese, egg, milk, thyme and salt, if using, to the meat. Mix well and divisible, spreading over the lasagna. Pour 1 / 4 cup spaghetti sauce over the meat mixture on each noodle. Carefully roll jelly roll style and place seam side up in an eight-inch square pan that has been sprayed with non-stick vegetable oil. Pour the remaining cup of spaghetti sauce over pasta. Cover and Bake for 45-50 minutes or until hot. Sprinkle with Parmesan cheese.

Note: You can use lean ground turkey instead of beef, if you prefer poultry to red meat.
