Molten Lava CakePosted on February 18, 2010. How do I make a Vegan Molten Lava Cake? I looked everywhere on the Web and I found almost nothing, but I found a few restaurants that served it so know it's possible. I can easily substitute margarine for butter in a classic recipe fudge cake, but eggs are a very essential. I'm stuck. Suggestions? arrowroot powder, use instead of eggs ... about a tablespoon of fat to equal one egg medium. Use EarthBalance for butter (duh) and use the eggs 3 / 4 c. teaspoon xanthan gum over 1 / 4 cup water for each egg called for in the recipe. I did successfully convert lava cake this way before. Ener-G is good for most cakes, but cake washing it tends to lead to a cake that collapses before it was cool enough to eat. Is a good site. Hope this helps!
