and several great recipes for kids? My daughter usually eat pretty healthy, but I'm tired of eating the same things. We eat lots of pizza, pita organic nitrate free hot dogs and pasta. She loves shrimp, but as you know can be quite expensive. Maybe some recipes to stretch the shrimp. She does not really take that much chicken. She likes steak, still expensive but not as healthy.
SOUP POTATO IN HEALTH
3 cups potatoes, diced
1 cup water
1 / 2 cup carrots, sliced
1 / 2 cup onion, diced
1 / 2 c.. salt
1 chicken bouillon cube
1 1 / 2 cup lowfat milk
2 v. soup. flour
1 / 4 lb. cheese, grated
Cook the vegetables (first 5 ingredients) until done. Do not drain!
Add next 4 ingredients (broth through cheese). Cook until thickened.
Makes 3-4 servings.
Tuna sandwiches HEALTH & EASY
1 can tuna
4 c. tablespoons fat free sour cream
2 v. tablespoons sweet relish
1 / 4 cup finely grated mozzarella cheese
pinch of salt and pepper
Combine tuna, fat-free sour cream, sweet relish (add more or less to taste), cheese and seasoning. Spread on toast or crackers - it's delicious!
(I think it's better with bread whole wheat or squaw.)

If she likes the shrimp, then here is a recipe for healthy and not so much for the shrimp.
1. Take an onion, put it in a pan and heat the olive oil.
2. Add a little (like a handful) of shrimp and add a little salt and pepper
3. After the prawns were cooked for 5 minutes, add spinach, mushrooms, cook for 5 minutes
4. Add a tin of baked beans
5 When the spinach is done remove from pan.
6. Add a little cheese.
7. Serve with tomato soup and garlic bread

Shrimp and rice bowls
3 C. Hot cooked rice
1 (11 oz) Can sweet corn, drained
1 / 4 C. drained and chopped in oil, sun dried tomatoes, reserving oil
1C grated Italian cheese blend
1 / 4 C. plus 1 T. slivered fresh basil leaves
1 / 2 t. salt, divided
1 pound medium shrimp, shelled and deveined
In a large bowl, combine rice, corn, sundried tomatoes, cheese, basil and salt. Pour into individual bowls.
To broil the shrimp shrimp place on sprayed broiler rack with cooking spray. Brush shrimp with oil reserved from tomatoes. Broil 4-5 inches from heat 4 minutes. To cook shrimp on the grill outdoors, brush with reserved oil from tomatoes, cook shrimp skewers over hot coals 4 minutes. Turn and brush with additional tomato oil. Grill 4-5 minutes or until shrimp are done. Top rice with shrimp bowls.
Makes 4 servings.
Shrimp Creole
3 c. soup. Crisco
1 medium onion, sliced
1 medium green pepper, chopped
Sauce 2 8-oz cans tomatoes
1 / 2 bay leaf
1 package of 7 ounces frozen shrimp, thawed
1 / 2 c.. salt
1 / 8 tsp. pepper
2-1/2 cups cooked rice
Cayenne pepper to taste
Melt Crisco in saucepan 2 liter. Add onions and green pepper. Cook gently, stirring occasionally, until tender.
Add tomato sauce, bay leaf, salt, shrimp, and black pepper. Simmer 15 minutes.
Add the rice, heat.
Add cayenne pepper to taste.
Shrimp and Vegetable Stir-Fry
3 T. cornstarch
1 (14 oz) Can chicken broth
1 T. soy sauce
1 / 2 t. sesame oil, optional
2 T. vegetable oil, divided
1 pound medium shrimp, shelled and deveined
4 vegetables C. cut-up (sliced carrots, green pepper strips, scallions, snow peas, sliced water chestnuts, sliced peppers, etc.)
